In a large soup pot sauté carrots celery and cabbage in canola oil for about 3 minutes. Peel and cut the onions carrots and beets alternatively shred the carrots and beets using the shredding blade of a food processor and sauté over medium heat in the olive oil with a pinch of salt in a large soup pot. Stir the beetroot cabbage and remaining dill into the soup. Cook about 1 hour or until beets are slightly tender. Then transfer the beans along with water into a small pot and cook it for 40 50 minutes.
Let the beans soak for 6 8 hours. Serve with a hearty bread for a filling dinner. What is important this borscht is cooked with beans so it is very nutritious healthy and tasty. Start cooking the potatoes and cabbage in veggie broth. It will keep all your family filled for hours.
